CLAM, RAZOR
BIOLOGY
One of three principal species found in British waters, razor clams are bivalve molluscs found in intertidal waters. Spawning occurs in summer. Fertilised eggs develop into mobile larvae hours after fertilisation. The larval phase includes several stages and lasts for about 3-4 weeks, during which time they drift with the current. The larval phase ends when larvae settle, attaching themselves to sand or shell by byssal threads. At around 5 mm length juveniles burrow into sand. They are long-lived and may survive to 16-18 years.
ADVICE
Avoid eating clams dredged from wild stocks. Choose clams harvested in the wild by sustainable methods only (such as hand-gathering). Avoid eating undersized animals (less than 10mm) and wild clams harvested during the spawning season (May - September).
CLAM, MANILA, SHORT-NECKED OR RIBBED CARPET SHELL
BIOLOGY
A bivalve mollusc with distinctive black and white shell markings, it is native to the waters of east Asia. Now widespread throughout the western world, with introductions made accidentally with oysters into North America, and deliberately as hatchery broodstock into Europe. In the wild it is found burrowing on coarse sediment in intertidal waters. Matures at about 2 years, with a corresponding shell size of about 20 mm. Maximum size about 65-75 mm. Spawning occurs in summer months.
ADVICE
All Manila clams in the UK are progeny of broodstock imported from the west coast of USA. They are grown in trays on trestles in the sea before planting out in ground plots or seabed. Only a small number of manila clams are farmed for the table in UK (6 tonnes, 2004), the biggest production is seed for ongrowing. Clams may be harvested by manual digging or raking, or by mechanical methods e.g. suction or hydraulic dredge. Manual harvesting methods cause less disturbance to sediment than mechanical methods. Shellfish farming is an extensive, low-impact method of mariculture and high quality water standards are required for cultivation of shellfish for human consumption. When buying any farmed fish, including shellfish, ask your fish supplier if they have a buying policy that ensures high environmental farming standards are required.

A number of different species may be marketed as clams, including species introduced from other areas of the world e.g.Manila clam and American hard shell clam. Clams can be farmed or harvested from wild stocks.

Carpet or venus shells are bivalve molluscs found burrowing on sand and gravel shores the world over. The shell is oval and grows up to 5cm.

CLAM, AMERICAN HARD SHELL
BIOLOGY
Found naturally along Atlantic coast of USA. American hard-shell clams were introduced into Britain in 1925.They are also called 'quahog', a native american word meaning 'hard shell'. They are a commercially important species. Spawns during summer. Clams change sex during their life, during early maturity they are male, as they get older they change to females (referred to as being protandric). They may live up to 40 years.

CHILEAN SEABASS OR PATAGONIAN TOOTFISH
BIOLOGY
Toothfish is a deep sea species found throughout large areas of the sub-Antarctic Ocean, but primarily in the Southern Ocean. It is a slow-growing fish living in depths from 300 to 3,500 m. It does not breed until it is 10-12 years old. At this stage it is about 70 cm long. Can reach 50 years of age and a length of 220cm. Chilean seabass spawn from June to September.
ADVICE
Chilean seabass is vulnerable to overfishing as it is large, slow-growing, late-maturing and has low reproductive capacity. It is also threatened by illegal fishing. In 2001, it was estimated that 50% of toothfish traded internationally was caught illegally, these illegal fisheries are also a threat to seabird populations, particularly albatross. Of the 21 species of albatross 19 are threatened with extinction largely because of longlining. See www.savethealbatross.net for more information. However fishery around South Georgia (FAO 48) was certified as an environmentally responsible fishery by the Marine Stewardship Council in March 2004. MSC certified chilean seabass has a MCS rating of 3. Avoid eating this species from all other fisheries.
CATSHARK OR LESSER SPOTTED DOGFISH
BIOLOGY
Catshark belongs to one of the largest families of sharks, the dogfishes or Scyliorhinidae. Mating occurs from late summer to November, after which females move to spawning grounds in shallower water. The shark embryos are enclosed in cases (called mermaids' purses) whilst they develop and mature (usually around June/July). Females and males mature from 54 to 60 cm in length at around 5 years of age. Catsharks can grow up to 1m in length, maximum age is unknown. They are also marketed as dogfish.
ADVICE
Catsharks are one of the few shark species whose numbers appear to be stable at present. In general consumers should avoid eating shark species as they are vulnerable to over-exploitation due to their specific biological characteristics (slow-growing, late to mature and generally produce few young).
BRILL
BIOLOGY
Brill belongs to a small family of left-eyed flatfish (they lie on their right side and both eyes are on the left). They can attain a length of 75cm, but usually no more than 55cm, and a weight of around 2.5kgs for females (who are the larger). Females are fully mature at about 4 years and 40cms. Maximum reported age is 6 years. They spawn in spring and summer.
ADVICE
Brill is mainly taken as by-catch in beam trawl fisheries in the North Sea. A considerable proportion of the catch is immature and the stock over-exploited. Avoid eating beam-trawled brill from the North Sea. The state of the stock in the Baltic Sea is unknown. Avoid eating immature fish (less than 40cm) trawled from all areas as these will not have had chance to spawn.
BREAM, GILTHEAD
BIOLOGY
Gilthead bream can grow to lengths of 70 cm and live for as long as 11 years. It is a sedentary species found in depths of up to 150m. Spawning occurs between November and December. STOCK OR FISHERY DETAIL

In Greece fish farming has emerged as one of the fastest growing industries and now accounts for around 50% of the European Union's production of sea bass and sea bream. Spain, France and Italy are also key producers.
ADVICE
Bream are farmed in open sea pens and are fed a diet reliant on wild fish capture. Look out for organically farmed sea bream which are farmed with lower stocking densities and fed more sustainable feeds. When buying farmed fish ask your fish supplier if they have a buying policy to ensure they only source fish from farms with high environmental and welfare standards.

Perjuangan oprek sana oprek sini ternyata belum berakhir. Makin sering oprek-oprek, makin banyak dapat.
